How should you do an oil tasting?

STEP 1: PREPARATION

Pour the oil in the glass and cover it with the watch glass. In order to intensify the aroma of the oil, it needs to be warmed a little which can be done by holding the glass in your hands and gently swishing it until it reaches the optimum temperature of about 28ºC. This process should take about 30 seconds.

The watch glass is used to maintain the aromas in the glass until you are able to bring the glass to your nose to inhale them.

STEP 2: “NOSE” THE OIL

Now uncover the glass and start with by taking a slow sniff followed by progressively deeper inhalations in order to identify the individual aromas. Cover the glass again and gently swish the glass again in preparation for the next step.

Take a small sip of the oil (about 3ml) and swirl it in your mouth for about 3-4 seconds. Next suck in 2 or 3 short breaths so that the oil can mix with the air – we call this oxygenating the oil – in order to bring out the aromas.

STEP 4: REFLECTIVE

Recall all of the aromas and flavours you identified in the olfactive step and linger on these flavours as you swallow the oil.

Reflect on the flavors it brings to mind – the most common notes are: sweet, bitter, spicy, green, fruity and nutty.
